Moroccan Chicken Stew
- from our friends Deb & Hayley at Deli-licious in Hamilton.

1 Tbsp four / ¼ tsp salt
1 tsp coriander
1 tsp ground cumin
1 tsp ground paprika
½ tsp ground cinnamon
500g chicken cut into 2 cm pieces.
2 medium onions, cut into wedges
3 cloves garlic, minced

1 Tbsp olive oil
1 large tin crushed tomatoes
1 tin chickpeas, rinsed and drained
1 ½ cups water
½ cup raisons
1/3 cup pitted sliced olives
3 cups hot cooked couscous
¼ cup fresh chopped coriander

Stir together first 6 ingredients. Coat chicken with mixture. Fry onions and garlic, add chicken pieces. Add tomatoes, chickpeas, water, raisins and olives. Bring to the boil. Simmer covered for 10 minutes stirring occasionally. To serve, spoon couscous into soup bowls. Ladle stew over and sprinkle with coriander.
